These cookies are so easy and great to make if you’re short on time or ingredients!

1 and 1/2 cup oats,
1/3 cup stevia,
1 egg,
1/2 tsp baking powder,
1 tsp vanilla bean paste or vanilla extract,
1/4 cup dark choc chips,
1/2 cup coconut oil (melted)

Once the ingredients are all mixed together, form the batter into cookie shapes and put on a sheet of baking paper on a tray. Bake at 180c for 8-10 minutes. Leave to cool, then devour!
