This fruity banana bread is fluffy, light and delicious. Plus it is full of healthy wholesome ingredients which will boost your energy, making it a perfect snack.


3 cups almond or oat flour

3-4 super ripe mashed bananas

1 tsp baking powder

1 tsp vanilla

2 eggs

2 tbsp greek yoghurt

½ tsp cinnamon

¾ cup blueberries

Mix together all the ingredients except the blueberries. Gently stir the blueberries into the batter, and then pour it into a lined loaf tin. Pop a few blueberries on top of the batter for decoration. Bake at 180c/350f for around 30-45 minutes. The bread is cooked when a fork or toothpick comes out clean.

P.S. You can swap the blueberries for other fruit such as strawberries or raspberries.
