These pancakes are light, fluffy and delicious!

Combine in a blender:
1 scoop vanilla whey protein,
1/3 cup oat flour,
1 tsp baking powder,
1 egg white,
1/4 cup plain Greek yoghurt,
1.5 tbsp desiccated coconut,
1-2 tbsp almond milk.

Once the ingredients are thoroughly mixed together plop a couple of tablespoonsof the mixture into a medium/high heat non-stick pan. Flip once bubbles appear on the surface. Stack them up and enjoy!
