These are by far my personal favourite cookies – they’re delicious and full of flavour! These are paleo and gluten free, and this recipe makes a small batch of about 6 cookies.

Ingredients:

1 and a 1/4 cup almond flour,

3 tbsp grass fed butter or coconut oil (melted)

2 tbsp honey

1 tsp vanilla

A pinch of baking soda

A handful of dark chocolate chips

Mix all the ingredients together except the 1/4 cup almond flour, then add this in if the mixture seems too thin (this depends on the butter/oil you use). Then pop little mounds of the mixture onto a baking sheet. Pop them in the oven at 180c/350f for around 10 minutes. They will still be squidgy when they come out the oven so leave them to cool and set.
