This recipe is perfect in the autumn months and produces fluffy but filling pancakes that are full of flavour!
- Â½ cup oat flour
- 2 egg whites
- 1 tbsp cottage cheese
- 3 tbsp pumpkin puree
- 1 tsp baking powder
- 1 tsp cinnamon or pumpkin pie spice mix
All you have to do is mix together all the ingredients until they are thoroughly combined. This recipe produces quite a thick pancake batter – don’t worry its meant to be like that! Heat up some oil in a pan to a medium temperature (I recommend coconut oil) and pour in your pancake mixture. Flip when bubbles appear on the surface.
