I LOVE lemon pancakes, they are comforting and zesty at the same time!
- 1 scoop vanilla protein powder
- 1/3 cup oat flour
- A pinch of baking powder
- 2 tbsp greek yoghurt
- 1 egg white
- 1 tbsp coconut flour
- 3-4 tbsp milk (I recommend unsweetened almond milk)
- The zest of a lemon
- A handful of raisins
In a blender or food processor combine all the ingredients except the raisins. Then gently stir the raisins through the batter. Heat up some oil in a pan to a medium temperature (I recommend coconut oil) and pour in your pancake mixture. Flip when bubbles appear on the surface.
