These muffins are my personal favourite – as they have the perfect light fluffy texture and an amazing zesty lemon flavour!


1/2cup + 1 tbsp coconut flour

5 eggs

1 tsp vanilla extract

1/4 cup melted coconut oil

The juice and zest of 2 lemons

1/3 cup honey

1/2 tsp baking soda

2 tbsp poppy seeds

In 2 separate bowls mix the wet and dry ingredients, and then combine both mixtures. Pour the mixture into muffin cases, and bake at 180c/350f for around 20-25 minutes.
