These cookies are crunchy on the outside and soft on the inside – with a fresh lemon coconut taste! They’re perfect for snacking.


1 cup brown rice flour

3 tbsp melted coconut oil

2 tbsp honey

1/3 cup shredded unsweetened coconut

The zest of a lemon

1/2 tsp vanilla extract

1/2 tsp baking soda

1/4 cup almond milk

Just combine the ingredients in a mixing bowl. Then mould into cookies and place on a baking sheet. Bake for around 15 – 20 minutes at 180c/350f.

Top Tip: The brown rice flour can be swapped for almond or oat flour.
