These bars are the perfect snack for a quick on-the-go energy boost. They are packed full of nutritious and delicious ingredients, and super easy to make!

Serves 9


  • 2 cups oats
  • 2 tbsp blueberry powder
  • The juice and zest of one lemon
  • 1/3 cup honey
  • 1/3 cup coconut oil
  • 1/4 cup coconut flour
  • 1 scoop of vanilla whey protein (I use Phd Woman)
  • Unsweetened almond milk (a few tbsp)
  • A selection of nuts and seeds to pop on top


These are super easy as they don’t require baking! Simply mix together all the ingredients except the milk and nuts/seeds in a bowl. Depending on the texture of your protein powder you may need to add a couple of tablespoons of the almond milk to help everything combine completely. Then get a small baking tray and line it. Press the mixture down into the baking tray and level it out. Pop the tray into the fridge for an hour or two to set and harden. Then sprinkle nuts and seeds on top and chop into bars! Yum!
