What? Inside out peanut butter cups? No, your eyes are not deceiving you. These are super delicious and have even more nutty goodness than a typical peanut butter cup!
- 1 cup peanut flour
- 1/2 cup melted coconut oil
- 8 tsp maple syrup
- 50g 85%+ dark chocolate
Combine Â½ cup peanut flour, Â¼ cup melted coconut oil and 4 tsp maple syrup. Pour a thin layer into the bottom of cupcake cases and freeze for 5-10 minutes until set. Then melt the chocolate and pop a layer of this on top. Freeze until set. Finally mix together the remaining Â½ cup peanut flour, Â¼ cup melted coconut oil and 4 tsp maple syrup. Pour this over the top of the chocolate layer. Freeze again until set.
I know it sounds like a lot of freezing – but these only take about 20-30 minutes to make in total! Store them in the fridge for up to two weeks.
