Yep… cookies with chickpeas in them! Don’t be scared… I promise you can’t taste them, and they give the cookies an absolutely amazing flavour and texture!

Ingredients:

1 can of chickpeas – a 400g can or 240g drained. Make sure you drain, rinse and thoroughly dry these.

1/2 cup peanut butter

1/4 cup milk (e.g. unsweetened almond milk)

1/4 cup honey

1/4 cup cocoa powder

1 tsp vanilla

1/2 tsp baking powder

A handful of dark chocolate chips

In a blender or food processor, combine all the ingredients except the chocolate chips. Then stir in this chips, and place little mounds of the mixture on a lined tray. Be sure to take time to lick the mixing bowl clean – the batter is delicious! Bake at 180c/350f for around 10 minutes. Leave them to cool and set – they’ll still be a bit squishy when they come out the oven – then devour them.
