So, I had my housemate taste test a selection of my recipes. He is not a fan of healthy food and much prefers a glass of wine and some white chocolate… however, he LOVED these! They were his favourite from my creations…and if he likes something, I can guarentee you will to!

Serves 6-8

Ingredients

  • 1 cup almond flour
  • 1 cup oats
  • 2 whole eggs
  • 1/4 cup coconut flour
  • 1/2 cup melted coconut oil
  • 1/4 cup almond milk
  • 2/3 cup raspberries (fresh)
  • 2 tbsp chocolate chips and a couple of dates for decoration
  • 1 serving of date paste (made by combining 10 pitted dated with 3 tbsp maple syrup and 1 tbsp almond milk in a high speed blender)

Method

Preheat the oven to 180c. Make the date paste. Combine this with all other ingredients except the chocolate chips and and extra dates. Literally just chuck it all in a bowl and stir up well. Then pour into a small lined baking tray. Pop the extra dates (chopped up) and the chocolate chips on top. Bake on the middle shelf for 15-20 minutes or more… until the top is solid and the inside is almost cooked right through but is still slightly soft. Take out and leave to set. Devour.
