These cookie dough bites will melt in your mouth – they’re so delicious that no one would guess that they’re healthy!

Ingredients:

1 can of chickpeas – a 400g can or 240g drained. Make sure you drain, rinse and thoroughly dry these.

1/2 cup peanut butter

1/4 cup honey

1 tsp baking powder

1 tsp vanilla extract

A handful of dark chocolate chips

Blend together all the ingredients except the chocolate chips until the mixture is smooth and creamy. Then stir the chocolate chips, and grab a spoon and pop little mounds of the mixture on a lined baking tray – whatever size you want depending on if you want bites or full on cookies! Then just bake them at 180c/350f for around 10 minutes. They’re still soft when they come out the oven so leave them to cool (and eat a sneaky warm one), and enjoy.
