The shredded coconut in these cookies gives them an amazing chewy texture, while also providing healthy fats!

Ingredients:

1 and 1/4 cup oat flour

1/2 cup shredded coconut

1 tsp baking powder

1/3 cup powdered stevia

3 tbsp melted coconut oil

1/4 cup milk (e.g. unsweetened almond milk)

1 egg

A handful of chocolate chips

Just mix the ingredients in a bowl, and then mould the dough into cookie shapes. Place the cookies on a baking sheet on a tray. Bake at 180c/350f for around 8-10 minutes. I highly recommend trying one while they’re still warm – the chocolate is still melted and it’s heavenly!
