This is one of my ultimate favourite recipes – I’ve made it again and again and just can’t get enough! These blondies have a secret ingredient – chickpeas! – which gives them the perfect texture and taste. No one will ever guess that they are healthy!

Ingredients:

1 can of chickpeas – a 400g can or 240g drained. Make sure you drain, rinse and thoroughly dry these.

1/4 cup peanut butter

1/4 cup oats or oat flour

1/2 cup dark chocolate chips or cacao nibs

1 tsp baking powder

1 tbsp vanilla extract

3/4 cup powdered sweetener (e.g. stevia)

100ml milk (e.g. unsweetened almond milk)

All you have to do is pop all the ingredients except the milk and chocolate chips in a blender/food processor and combine. Then slowly add the milk until the mixture is thick and creamy (you might not need all the milk!). Stir in the chocolate chips. Pour into a lined tin and bake at 180c/350f for 15-20 minutes. Leave them to cool and set before you slice them!
