These cookies are crunchy on the outside, and soft and chewy on the inside! They’re a brilliant post-workout snack due to the carbohydrates in the oats and banana which will help replenish your energy stores.

Ingredients:

2 overly ripe bananas mashed

1 cup oats

1/4 cup shredded coconut

3 tbsp peanut butter

A handful of chocolate chips or cacao nibs

Just mix together all the ingredients, and spoon onto a baking sheet. Then bake them at 180c/350f for around 15-20 minutes…. And gobble them up!
