These muffins are perfect for breakfast on-the-go, and will give you a slow release of energy throughout the day!


3 large mashed bananas

2 cups blueberries

1 cup milk (e.g. unsweetened almond milk)

2 eggs

1 tbsp baking powder

3 cups oats

Simply mix all the ingredients except the blueberries, and then gently stir these in. Pop muffin cases into a muffin pan, and spray these with cooking spray to reduce sticking. Spoon the mixture into the cases, and cook at 200c/400f for 20-25 minutes.

Top tip: To make chocolate muffins just remove the banana and blueberries and add some 100g melted dark chocolate.
