These cookies taste exactly far too good to be so healthy! The almond butter gives them a melt-in-your-mouth texture. These cookies are low carb – so perfect for those of you who are watching your carbohydrate intake.


1 cup almond flour

1/2 cup almond butter

2 tbsp melted coconut oil

2 eggs

A pinch of baking powder

A handful of chocolate chips

(optional: 1/3 cup powdered sweetener e.g. stevia)

Just thoroughly combine the ingredients – this may be easier if you melt the almond butter slightly in the microwave. Then spoon the mixture onto a baking sheet, and bake at 180c/350f for around 10 minutes.
